I NEED YOUR INPUT for Freezer Cooking #4!!

I am prepping to do a Freezer Cooking #4: "SOUPS"  this weekend in preparation for the cooler fall/winter months!

I would love to hear from my readers about the soups they would be interested in seeing on the recipe list this time around!

My plan is to do 4-5 different soups and doing a double batch of each which will come out to about 16-20 "soup" meals in the freezer!

  3. I recently went to our local bent-and-dent store and found several very large (quart) cans of Campbell's Soup. I chose the New England Clam Chowder. I wanted to cook it for my own lunch, and realized immediately that once the can is opened, something would need to be done with all that soup. So I poured enough out for me to reconstitute for lunch, then I froze it in a container. Do you have any bright ideas about next time? Perhaps I should reconstitute it and then mix something interesting into it, and THEN freeze it? I know you asked for ideas, but maybe you could throw an idea out about this and share it with your readers (and me)? Thanks.

  6. Lasagna soup is an easy one to freeze (just leave out the noodles!), chili, vegetable and chicken noodle are staples in our house!

  8. i had cheeseburger soup for first time ....this particular recipe was soooooo full of flavour!!! i think would freeze well too. i'm on the mission to find a recipe that taste the same.

  9. Potato Cheese Soup... Chicken Stew... By the way your other freezer posts have inspired me to say the least so I'm going to start tackling these great and yummy ideas. Thanks and cant wait til the soup one is up. :)

  10. In honor of the season -- pumpkin or squash soup. (Butternut, acorn or your favorite winter squash.)

    Beans & Greens soup -- kind of like the Zuppa Toscana at Olive Garden, but with white beans instead of potatoes. Kale is wonderful in this soup. (I think the beans freeze better than potatoes.)

  11. Here is a great cheeseburger soup recipie, not sure how it freezes
    Cheeseburger soup
    ½ pound ground beef
    ¾ cup chopped onion
    ¾ cup shredded carrots
    ¾ cup diced celery
    1 tsp dried basil
    1 tsp dried parsley flakes
    4 Tbl butter or margarine, divided
    3 cups chicken broth (I use water and that chicken soup base)
    4 cups diced peeled potatoes (1 ¾ pounds)
    ¼ cup all purpose flour
    8 oz process American Cheese, cubed (2 cups) (velveeta)
    1 ½ cups milk
    ¾ tsp salt
    ¼- ½ tsp pepper
    ¼ cup sour cream
    In a 3 qt. saucepan, brown beef; drain and set aside. In the same saucepan, sauté onion, carrots, celery, basil and parsley in 1 T. butter until vegetables are tender, about 10 min. Add broth, potatoes and beef; bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender. Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir for 3-5 min or until bubbly. Add to soup; bring to a boil. Cook and stir for 2 min. Reduce heat to low. Add cheese, milk, salt and pepper; cook and stir until cheese melts. Remove from the heat; blend in sour cream.
    Yield: 8 servings

  12. This comes at perfect timing, as I am trying to meal plan for the winter as well. I would love to see a Classic Chicken Soup, a Hearty meat chili, Sausage Tortellini Soup, 15 Bean Soup, and a Ham Lentil Soup. I am very much looking forward to your next freezer post!
